Recipe ingredients

  • 1 clove garlic, finely chopped
  • 1/4 teaspoon pepper
  • 1 teaspoon cornstarch or flour
  • 1 teaspoon vegetable oil
  • 1 pound sirloin tips, thinly sliced
  • 3 tablespoons vegetable oil
  • 1/2 medium onion, sliced
  • 2 cups green beans, with ends removed and cut into bite-sized pieces (*)
  • 1/4 cup water or chicken broth
  • 1 teaspoon soy sauce

(*) This typical family dish can be made with chopped celery, broccoli, or cauliflower in place of the green beans. For a delicious vegetarian dish, try replacing the beef with tofu or hardy vegetables such as eggplant or mushrooms.

How to make vietnamese stir-fried beef with green beans (thit bo sao dau)

  • In a large mixing bowl, combine garlic, pepper, cornstarch, and 1 teaspoon oil. Add beef and mix well. Cover and let stand at room temperature for 30 minutes.
  • In a wok or large skillet, heat 2 tablespoons oil over high heat for 1 minute. Add meat. Stir quickly over high heat for about 2 minutes, or until beef begins to turn brown. Remove from pan and place in a large bowl. Set aside.
  • Wash wok or skillet and dry well.
  • Heat 1 tablespoon oil over high heat for 1 minute. Add onion and cook, stirring frequently, for 2 minutes, or until nearly tender.
  • Add green beans and stir well. Add water or broth, cover, and turn heat to low. Simmer for 4 to 5 minutes, or until beans are tender but crisp.
  • Uncover and add soy sauce and beef. Cook over medium heat for 1 to 2 minutes, stirring constantly, until heated through.
  • Serve over hot rice.
