Lebanese lentil soup (shourabit adas) recipe



Recipe for lebanese lentil soup (shourabit adas) in our easy ethnic recipes collection. This full-bodied soup is a traditional dish for iftar, the evening meal during Ramadan. Many ingredients, such as rice, ground lamb or beef, chickpeas, or beans, can be added to this simple soup.

Recipe ingredients

  • 1 cup red lentils, whole or split (*)
  • 6 cups water
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • Salt and pepper to taste

(*) Look for red lentils at health food stores and middle eastern markets.

How to make lebanese lentil soup (shourabit adas)

  • Rinse and drain lentils. Place lentils and water in a large pot and bring to a boil. Reduce heat, cover, and simmer.
  • While lentils are simmering, heat olive oil in a skillet over high heat. Saute onion in oil until golden brown. Add onions, salt, and pepper to lentils.
  • Continue simmering for 25 to 35 minutes, or until lentils are soft. Serve hot with lemon wedges and pita bread.

Cooking time: 45 to 55 minutes
Serves 4
