Lebanese festive rice pudding (moghlie) recipe



Recipe for lebanese festive rice pudding (moghlie) in our easy ethnic recipes collection. Moghlie is served during many holidays and festivals in Lebanon. It is also a traditional treat to serve to visitors when a child is born. It is strongly flavored with aniseed, so you may want to use less if you do not like the taste of anise.

Recipe ingredients

  • 1/2 cup ground rice (*)
  • 3 to 3 1/2 cups water
  • 1/2 cup sugar
  • 1/2 teaspoon aniseed
  • 1/2 teaspoon caraway seed
  • 1/8 teaspoon ground ginger
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped pistachios
  • 2 tablespoons chopped walnuts

(*) Look for ground rice or rice flour in the baking section of your grocery store.

How to make lebanese festive rice pudding (moghlie)

  • In a medium bowl, combine ground rice and 1/4 cup cold water. Gradually stir in more water until mixture forms a smooth paste. Add sugar and spices and mix well.
  • In a large saucepan, bring 2 1/2 cups water to a boil over high heat. Add ground rice mixture gradually, stirring constantly to prevent lumps from forming. Continue to stir until mixture boils again.
  • Reduce heat to low. Cover and simmer, stirring occasionally to prevent mixture from sticking to bottom of pan, for about 10 minutes, or until pudding is thick enough to coat the back of a spoon.
  • Allow pudding to cool slightly before pouring into a glass serving bowl or individual bowls. Cool to room temperature and refrigerate.
  • Before serving, sprinkle pudding with chopped nuts and serve cold.

Preparation time: 10 to 15 minutes
(plus chilling time of a few hours)
Cooking time: 25 to 30 minutes
Serves 4
