Israeli sukkot stew (sukkot tsimmes) recipe



Recipe for israeli sukkot stew (sukkot tsimmes) in our easy ethnic recipes collection. A tsimmes is a fruit and vegetable stew eaten on the Sabbath and at Sukkot. This recipe combines many eastern european traditions.

Recipe ingredients

  • 2 pounds chuck roast, cut into 1-inch pieces
  • 1 tablespoon salt
  • 2 tablespoons vegetable or olive oil
  • 3 medium onions, peeled and sliced
  • 2 large sweet potatoes, peeled and quartered
  • 5 to 6 large carrots, peeled and thickly sliced
  • 2 white potatoes, peeled and quartered
  • 1/2 pound prunes
  • 1/2 pound dried apricots
  • Rind and juice of 1 orange
  • 1/4 cup brown sugar
  • Dash of nutmeg
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

How to make israeli sukkot stew (sukkot tsimmes)

  • Sprinkle the meat with salt. Heat oil in a skillet over medium heat. Brown meat and onions. (*)
  • Add enough water to cover meat. Simmer, uncovered, for 1 hour.
  • Preheat oven to 350 degrees F.
  • Place meat, onions, and cooking liquid in a 4-quart casserole. Add the sweet potatoes, carrots, white potatoes, prunes, dried apricots, orange juice and rind. Sprinkle with brown sugar, nutmeg, and cinnamon. Cover contents with water. Cover casserole dish and bake 1 hour.
  • Uncover, season with salt and pepper, and bake an additional 2 hours, or until the liquid disappears and the top turns crusty.

(*) A nonstick vegetable spray may be used in place of oil for browning the meat and onions.

Cooking time: 4 hours
