How to make indonesian pork sate (sate babi)
In a medium bowl, combine soy sauce, garlic, peanut oil, raw peanuts, salt, and pepper to make the marinade. Add meat cubes to the marinade and place the bowl in the refrigerator for 1 hour or more. Stir meat from time to time.
Slide the marinated meat onto skewers and place on a clean plate.
Make dipping sauce by combining shallot, chili peppers, soy sauce, and water in a medium saucepan. Bring mixture to a boil, then reduce heat and simmer for about 5 minutes. Turn off the heat and allow sauce to cool before adding lime juice. Set aside.
Meanwhile, preheat the broiler or grill and broil sates, turning frequently. Cook for 5 to 8 minutes, or until tender.
Serve sates on a large platter and garnish with lime wedges and deepfried shallots. Add peanuts to the sauce and pour the mixture into a bowl just before serving.
