Chinese watercress soup recipe

Recipe ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 cup lean pork, cut into small pieces
  • 1 cup beef or vegetable broth
  • 1 cup water
  • 1 bunch watercress, chopped (*)

(*) As a variation on this recipe, try replacing the watercress with 2 cups of any chopped leafy green vegetable, such as chinese cabbage, spinach, or chard.

How to make chinese watercress soup

  • In a bowl, mix soy sauce and cornstarch. Add pork. Let stand for 15 minutes.
  • In a deep saucepan, bring beef or vegetable broth and water to a boil.
  • Add pork and the soy sauce and cornstarch mixture. Cook over medium heat for 10 minutes.
  • Add watercress and cook uncovered for 2 minutes.

Cooking time: 15 minutes
Serves 4
